Spinach Stuffed Shells

  • 2 10 oz Packages frozen chopped spinach, thawed
  • 15 oz Cottage cheese
  • ¾ Cup Grated parmesan cheese, divided
  • 2 Tbs Fennel seeds
  • 2 Tbs Fresh basil*
  • 1 Pinch Nutmeg
  • 1 Pinch Red pepper flakes
  • 4 Cloves Garlic, minced
  • Salt and pepper to taste
  • 2 Cups Marinara sauce
  • 24 Jumbo shells, freshly cooked
  1. Dry spinach and transfer to a bowl.
  2. Add cottage cheese, ½ cup Parmesan, fennel, basil, nutmeg, red pepper and garlic to the bowl.
  3. Season with salt and pepper.
  4. Preheat oven to 350 degrees.
  5. Fill each shell with the spinach and cheese mixture and place in a 9x13x2-inch baking dish, filling side up.
  6. Spoon marinara sauce over the shells. Sprinkle with remaining parmesan cheese.
  7. Cover with foil and bake 15 minutes.
  8. Remove foil and bake an additional 10 minutes or until heated through.
  9. Dust with parmesan cheese and serve warm!
