Ingredients (adjust amounts to suit your taste):
- 4-6 C. finely chopped broccoli florets, blanched
- 1/3- ½ C. dried cherries (or raisins or dried cranberries)
- 1/3- 1 C. minced sweet bell pepper
- ¼- ½ C. minced red onion
- 2-3 t. balsamic vinegar
- 1-2 T. extra-virgin olive oil
- 1/4 teaspoon sugar (or ½-1 t. strong honey or maple syrup)
- salt and pepper to taste
- ¼- ½ C. pine nuts or slivered almonds

1. Toss broccoli, dried fruit, pepper and onion in bowl.
2. Combine vinegar, oil, sweetener, salt and pepper (I like to put everything in a small jar, cover, and shake).
3. Pour dressing into bowl, toss till well combined. Garnish with nuts.
Makes 4 to 8 servings.
