Chef Dave’s Smoked Ribs

Ingredients
  • Ribs — as many as you can fit in the smoker
  • 1/2 cup smoked paprika
  • 1/2 cup black pepper
  • 1/2 cup kosher salt
  • 1/2 cup onion powder
  • 1/2 cup garlic powder
  • 1/2 cup cayenne pepper
  • 1/2 cup oregano
  • 1/2 cup thyme
  • 2 cups canola oil

  1. Mix into a paste and rub over ribs.
  2. Lay in a shallow pan and cover with plastic wrap. Let sit two hours at room temperature.
  3. Smoke ribs at 225 degrees for six hours.
  4. Brush with brown butter and enjoy.
