Moroccan Chicken & Couscous

  • 12 Chicken thighs and drumsticks (about 3 1/2 lb.)
  • Cooking spray
  • 1 teaspoon Cumin
  • ½ teaspoon Cardamom
  • ½ teaspoon Cinnamon
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 3½ cups Couscous, cooked
  • ½ cup Roasted peppers, chopped
  • ½ cup Sliced almonds
  • 1/3 cup Golden raisins
  • 2 Green onions, finely chopped
  1. Arrange chicken on large rimmed baking sheet; spray with cooking spray. Sprinkle with mixture of cumin, cardamom, cinnamon, salt, and pepper.
  2. Roast in 475 degrees F oven 35 minutes or until chicken is cooked (165 degrees F).
  3. Toss couscous with roasted peppers, almonds, raisins, and green onions. Serve chicken on couscous.
