Ingredients:
- Chicken thighs (bone in)
- 2 Tb good chili powder
- 2 Tb kosher salt
- 2 Tb Hungarian paprika (or other good paprika)
- 3 Tb brown sugar
- And if you like it hot add 1 tsp. of red pepper
- 2 quarts water
- ½ cup kosher salt
- ½ cup sugar

Mix brown sugar in a bowl so it’s not clumpy. Add other ingredients to the bowl, and mix everything by hand.
Bake in oven at 425 degrees for about 40-45 minutes (make sure chicken is 165 degrees internally).
Zorba tip: Feel free to use the excess chicken fat oil as a topping for other foods (baked potato, etc).
