Fudgy Olive Oil Brownies

  • 1/4 C Extra-virgin olive oil
  • 1/4 C Non-fat Greek yogurt
  • 1/4 C Dark brown sugar
  • 1/2 C Sugar (or 3.5 Tbl/12 packets Truvia)
  • 2 tsp Vanilla extract
  • 2/3 C Applesauce, unsweetened
  • 1/2 C Whole wheat flour
  • 1/3 C Cocoa power (plus optional 1-2 Tbl more)
  • 1 tsp Instant espresso powder
  • 1/4 tsp Baking powder
  • 1/4 tsp Salt
  • 1/3 C Walnuts, chopped (optional)
  • Flaky sea salt for sprinkling (optional)
  1. Preheat the oven at 350 degrees Fahrenheit.
  2. In a bowl mix the olive oil, vanilla, and sugars with a spoon until smooth.
  3. Mix the applesauce and yogurt in a small bowl and add to the olive oil mixture, mixing well.
  4. In another bowl blend the flour, cocoa powder, instant espresso powder, salt and baking powder. Add to olive oil mixture and mix well.
  5. If using nuts, pour into batter and mix again.
  6. Line a 9 inch square pan with wax paper and pour the brownie mixture in the pan, smooth the top with a spatula.
  7. Bake for about 25 minutes or until a toothpick inserted 1 inch away from the edge comes out clean.
  8. Let it cool completely, remove the wax paper and cut in squares.
  9. Enjoy!
