Ingredients
- 8 Small Red potatoes, cubed
- 4 Slices Turkey bacon
- 6 Cloves Garlic, minced
- 1/2 Cup low-fat mayonnaise
- 2 Medium sour apples, cored and chopped
- 2 Medium scallions
- 1 tsp Hungarian paprika
- 1 tsp Chives, snipped
- 1/2 tsp Kosher salt
- 1/8 tsp Freshly ground black pepper

Fry or microwave turkey bacon until crisp; drain and blot with undyed paper towel. Set aside until potatoes are cooked.
Place potatoes in steamer and steam until fork-tender. (About 5 minutes)
In large bowl, mix: Turkey bacon, garlic, low-fat mayonnaise, chopped apples, scallions, paprika, chives, salt and ground peppercorns. Fold in potatoes.
Cover and refrigerate overnight. Serve chilled as a side dish or over salad greens1
