Recipe: West African Rice Salad

Ingredients:

  • 2 cups brown or white rice
  • 2 cups fresh sweet corn (whole)
  • ¼ cup dried raisins
  • ¼ cup fresh parsley
  • 1 cup olive oil
  • Salt to taste

  • Wash rice and warm in microwave for approximately 6 minutes to dry up water.
  • Bring a pot of water to a boil and add some salt to it.
  • Add rice to pot and cook stirring frequently to avoid sticking and burning.
  • Once all the water is absorbed, add whole corn to it along with the raisin and cover pot tightly and cook rice to perfection – well done.
  • Simmer and serve hot or cold with any fish or meat sauce or stew.
  • Garnish with fresh parsley.
