“Packing House”-style Fish Fry Breading Recipe

Ingredients

  • 1 lb Fine Bread Crumbs
  • 1 Tbl Granulated Onion
  • 2 tsp Black Pepper, fine grind
  • 1 tsp Salt, fine grain
  • 1 pinch Cayenne Pepper

  • 3 cup Milk
  • 6 each Whole Egg, beaten

Instructions

1. Combine all spices with bread crumbs and stir until fully incorporated.

2. Whip eggs until homogenous then combine with milk.

3. Place fully thawed fish in unseasoned flour (amount as needed).

4. Remove from flour shaking off excess and place in egg wash mixture.

5. Remove from egg wash allowing excess to drain off.

6. Place fish in a shallow pan filled with bread crumbs and coat liberally.

7. Press fish lightly into crumbs but not hard enough to degrade the meat.

8. Remove from crumbs, shaking free excess.

9. Place into fryer set to 325F and cook for 4-6 minutes dependant on filet size.

The fish will finish golden brown and delicious. Enjoy immediately after removing from fryer oil.
