Heirloom Tomato Salad

Ingredients

  • 2 or 3 large Heirloom tomatoes (cut into chunks or slices)
  • ⅓ cup red onion (or shallots) (finely sliced)
  • 1 tbsp fresh oregano
  • ¼ cup high quality extra virgin olive oil
  • ¼ cup white wine vinegar
  • Course sea salt flakes
  • Black pepper
  • Crusty bread for serving

  1. Cut and arrange the tomatoes and add to a bowl.
  2. Add the onion, oregano, sea salt, pepper and then pour over the olive oil and vinegar.
  3. Stir gently and then cover and leave for an hour or so to marinade.
  4. Decant to a serving platter and serve cold or at room temperature with sliced crusty bread.
