Ingredients
- 2 or 3 large Heirloom tomatoes (cut into chunks or slices)
- ⅓ cup red onion (or shallots) (finely sliced)
- 1 tbsp fresh oregano
- ¼ cup high quality extra virgin olive oil
- ¼ cup white wine vinegar
- Course sea salt flakes
- Black pepper
- Crusty bread for serving

- Cut and arrange the tomatoes and add to a bowl.
- Add the onion, oregano, sea salt, pepper and then pour over the olive oil and vinegar.
- Stir gently and then cover and leave for an hour or so to marinade.
- Decant to a serving platter and serve cold or at room temperature with sliced crusty bread.
