- 1/4 C Extra-virgin olive oil
- 1/4 C Non-fat Greek yogurt
- 1/4 C Dark brown sugar
- 1/2 C Sugar (or 3.5 Tbl/12 packets Truvia)
- 2 tsp Vanilla extract
- 2/3 C Applesauce, unsweetened
- 1/2 C Whole wheat flour
- 1/3 C Cocoa power (plus optional 1-2 Tbl more)
- 1 tsp Instant espresso powder
- 1/4 tsp Baking powder
- 1/4 tsp Salt
- 1/3 C Walnuts, chopped (optional)
- Flaky sea salt for sprinkling (optional)
- Preheat the oven at 350 degrees Fahrenheit.
- In a bowl mix the olive oil, vanilla, and sugars with a spoon until smooth.
- Mix the applesauce and yogurt in a small bowl and add to the olive oil mixture, mixing well.
- In another bowl blend the flour, cocoa powder, instant espresso powder, salt and baking powder. Add to olive oil mixture and mix well.
- If using nuts, pour into batter and mix again.
- Line a 9 inch square pan with wax paper and pour the brownie mixture in the pan, smooth the top with a spatula.
- Bake for about 25 minutes or until a toothpick inserted 1 inch away from the edge comes out clean.
- Let it cool completely, remove the wax paper and cut in squares.
