Apple Pie Waffles (National)

  • 1 3/4 cups Whole wheat pastry flour
  • 4 t Truvia
  • 1 t Baking powder
  • 1/2 t Baking soda
  • 1 1/2 t Cinnamon
  • 1/4 t Nutmeg
  • 1/8 t Ground cloves
  • 1/4 t Ground ginger
  • 1/4 t Salt
  • 1/2 t Vanilla
  • 1/2 cup Applesauce
  • 1 3/4 cup Skim milk
  • 4 large Egg whites
  • Cooking spray
  1. Preheat oven to 250 (to keep waffles warm after cooking). Preheat your waffle maker.
  2. Combine all dry ingredients through salt in a large mixing bowl (flour, Truvia, baking powder, baking soda, cinnamon, nutmeg, ground clove, ginger, and salt). Whisk to combine.
  3. In a separate bowl, combine the vanilla, applesauce, and milk. Mix well.
  4. Slowly whisk the wet ingredients into the dry ingredients – just until combined. Don’t overmix.
  5. In a separate bowl, whisk the egg yolks until they reach stiff peaks.
  6. Gently fold the egg whites into the waffle mix until well combined.
  7. Spray your waffle maker with cooking spray and pour in the waffle batter. Close and cook for 5-7 minutes, depending on your waffle maker.
  8. Serve hot with a sprinkle of cinnamon and roasted apple slices or warmed-up applesauce.
