Ingredients
- 2 cups chopped onion
- 2 medium Russet potatoes, peeled and chopped into 1/2 inch pieces
- 6 cups vegetable broth
- 4 heaping cups (about 1/4 brown bag) of nettles, loosely packed. (To help remove the sting, wash them in warm water. But still wear gloves.)
- 1 teaspoon nutmeg
- 1/2 to 1 teaspoon salt to taste

- Bring the first 3 ingredients to a boil then simmer for 20 minutes.
- Add the nettles after the 20 minutes. Bring back to boil,then simmer for 10 minutes.
- During the 10 min add the nutmeg and salt.
- When cooked, purée the soup.
- Serve with a dollop of sour cream and or a splash of lemon juice. Remember to add the love and or magic.
