One of the few urban cheesemaking plants in the U.S. has opened in Milwaukee.
Dozens of people waited in line at the Clock Shadow Creamery, as the company and the green building that it’s in held their grand opening Thursday. The site is near the famous Allen-Bradley clock, in a largely Latino neighborhood. The creamery uses milk from southeastern Wisconsin farms to make cheese curds, and plans to make Mozzarella, Camembert and some Hispanic cheeses. Creamery owner Bob Wells says it’s important to bring cheesemaking to the big city.
Wells says the creamery has six employers and plans to add a few more soon. He says his firm will also offer cheesemaking classes. Wells says Clock Shadow is the closest cheesemaker to about one million people, but he says its success will depend on meeting community needs.
