The statistics for food waste in the United States have skyrocketed over the last few decades. We waste twice as much food as we did in the 1970’s, and the National Resources Defense Council says forty percent of all food produced in the U.S. is thrown out. That adds up to 35 million tons of edible food, wasted. We talk to the author of a cookbook about how to cut down on food waste–and why you should care about food waste.
