- 3/4 cup Oatmeal (preferably old-fashioned)
- 1 cup Orange juice (from concentrate or freshly-squeezed)
- 1 Tbl Lemon juice
- 1/2 cup Raisins*
- 1/4 cup Almonds (toasted)
- Stir together the oatmeal, orange juice, lemon juice and raisins.* Cover, and refrigerate overnight.
- Lightly toast the almonds (or nut of choice) in a dry pan over low heat.
- In the morning, stir again and add the almonds on top just before serving.
- Enjoy!
