The food safety divison of the Wisconsin Department of Agriculture has published a new set of guidelines for processing venison.The goal is to reaasure hunters that despite the out break of Chronic Wasting Disease in the state’s deer herd, it’s still possible to eat venison, if you take the right precautions.
