Tofu Salad with Mixed Greens

Marinated Tofu:

  • 1 tablespoon sweet chili sauce or sweet plum sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, crushed
  • ½ teaspoon grated fresh ginger root
  • 8 ounces baked tofu, or tempeh

  • 2 cups bagged mixed greens of choice
  • 1 cup finely shredded red cabbage
  • 1 cup grated carrots
  • 2 tablespoons chopped peanuts

Directions:

  1. Marinate the tofu: Whisk chili sauce, soy sauce, sesame oil, garlic, and ginger together in a large bowl. Add baked tofu and toss to coat. Cover and marinate for 1 hour in the refrigerator.
  2. Make the salad: Combine mixed greens, carrots, and peanuts in a bowl. Add tofu and marinade and toss gently to combine.
