Strawberry And Pea Salad

Ingredients:

  • 2 1/2 cups sliced ripe strawberries
  • 1 1/2 cups sugar snap peas
  • 1/4 cup crumbled feta cheese OR aged sharp white cheddar
  • (Optional) 2 fresh mint leaves, finely chopped

  1. Steam sugar snap peas for 2 minutes
  2. Cool peas in ice water, then drain well
  3. Cut peas in half
  4. Add strawberries, peas, and cheese to large serving bowl and toss
