Orange Juice Oatmeal

  • 3/4 cup Oatmeal (preferably old-fashioned)
  • 1 cup Orange juice (from concentrate or freshly-squeezed)
  • 1 Tbl Lemon juice
  • 1/2 cup Raisins*
  • 1/4 cup Almonds (toasted)
  1. Stir together the oatmeal, orange juice, lemon juice and raisins.* Cover, and refrigerate overnight.
  2. Lightly toast the almonds (or nut of choice) in a dry pan over low heat.
  3. In the morning, stir again and add the almonds on top just before serving.
  4. Enjoy!
