Mushroom and Onion Tilapia

  • 2 Tbs Olive oil
  • 1 Large Sweet onion, sliced
  • 2 Packages Mushrooms*
  • 1/3 Cup Dry vermouth (or dry white wine)
  • 3 Cloves Garlic, pressed (optional)
  • 4 Tilapia steaks
  1. Heat olive oil in large skillet.
  2. Add onions and mushrooms over medium high heat.
  3. Saute until onions are translucent and mushrooms are bronzed.
  4. Add vermouth and cook approximately 1 to 2 minutes until bubbly.
  5. Add the garlic now if you are using it.
  6. Place Tilapia steak on top of onion and mushroom mixture.
  7. Cover and reduce heat.
  8. Cook approximately 7-10 minutes or until fish is done.
  9. Serve with onion and mushroom mixture surrounding the fish.
