Maple Roasted Carrots With Goat Cheese

3 lbs Baby carrots, halved
1/4 cup Maple syrup
3 Tbs Olive oil
1 tsp Kosher salt
1/4 cup Crumbled goat cheese
3 Tbs Chopped chives

1. Preheat oven to 400°F. On a large baking sheet, toss carrots with maple syrup, olive oil and salt. Roast 15 minutes or until tender.

2. Remove from the oven and transfer to a serving platter. Garnish with goat cheese and chives to serve.
