- 1 tablespoon Extra virgin olive oil
- 1 Small onion, diced
- 2 large Potatoes, cubed
- 2 large Carrots, sliced
- 8 oz Mushrooms, sliced
- 1 large Red bell pepper, sliced into strips
- 4 cloves Garlic, minced
- 2 tablespoons Butter
- Salt and Pepper
- Tear off 4 large square sheets of aluminum foil. Drizzle all 4 foil aluminum square pieces with olive oil. Put 1/2 tbsp. of butter on each foil sheet.
- Place the potatoes, carrots, mushrooms and red peppers on top of the butter on each aluminum foil square.
- Evenly sprinkle minced garlic and diced onion over each of the four servings. Then sprinkle with kosher salt & pepper. Drizzle with a bit more olive oil.
- Fold up each of the sides of the foil squares, making a nice little bed for the ingredients so none of the butter and oil can escape while cooking.
- Grill packets for about 35-45 minutes. You can either grill them over a medium heat grill, or bake them in the oven at 350 degrees. Or if you really want to be authentic, heat them over a campfire with friends (and a harmonica!).
**Feel free to add a meat such as chicken or steak.
