As Zorba mentioned on the show, “Brining” your chicken (or any meat for that matter), is a good way to ensure a tender and delicious entree.
The “brining” process consists of mixing cold water, salt and sugar (1/4 cup each) and the chicken in a large pot or bowl for at least half an hour before preparing it for your recipe.
Zorba recommends an article available at the Cooks Illustrated website (subscription needed, but we recommend the free trial!) that has an in-depth look at “brining” and offers guidelines for all kinds of meat.
