Two-ingredient Berry Yogurt Popsicles
For anyone who doesn't have an ice cream maker (and doesn't want to bother with one), simple popsicles can be just the trick. I love to make these for my kids because they taste like dessert, but they don't contain any sugar so they can be eaten at any time of day. If you want to add sugar you certainly can, but I love having a sweet treat that is also unequivocally healthy. And I especially love watching something so easy turn into something so delicious.
INGREDIENTS
Serving: 6-8
- 2 pints berries (a little over 1 cup when pureed)
- 1/2 cup Greek yogurt
DIRECTIONS
Blend the berries and yogurt together. Pour into a popsicle mold and add popsicle sticks. If you don't have a popsicle mold, you can use small yogurt cups or other small plastic containers instead and it also works great. Freeze for at least 24 hours. Remove the popsicles from the mold or plastic cups. If they are a little too stuck you can run a bit of warm water on the mold to help loosen them up a bit. Eat straight from frozen.
