Asiago Bacon Mini Frittatas
Makes 6-8 servings
- 2 tablespoons butter or margarine, melted
- 1/4 pound grated Asiago cheese
- 2 green onions, finely chopped
- 8 strips bacon, cooked and crumbled
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 8 eggs, lightly beaten
- Preheat oven to 375 degrees and brush a mini muffin pan with melted butter.
- In a bowl, mix together the cheese, bacon, green onions, salt, and pepper. Fill about 24 mini muffin cups half full with the cheese mixture. Then pour the beaten eggs over the top, filling the cups to just below the edge. Bake until puffed and lightly browned, about 12 minutes.
