Zorba’s Zesty Zalsa

  • 1 Red pepper, cut into 1-inch pieces
  • 2 tablespoons Extra virgin olive oil
  • 1 lb Plum tomatoes, halved
  • 4 Scallions, cut into 2-inch pieces
  • 2 medium Jalapeño peppers, halved and seeded
  • Kosher salt
  • Ground black pepper
  • 1½ cups Fresh cilantro leaves
  • 3 tablespoons Fresh lime juice

Heat broiler. On a large broiler-proof rimmed baking sheet, toss the pepper with the oil and broil for 2 minutes.

Add the tomatoes, scallions, and jalapeños, season with ½ teaspoon each salt and pepper and toss to combine. Broil, tossing once more, until the vegetables are tender, 3 to 4 minutes total.

Transfer the vegetables to the bowl of a food processor, add the cilantro and pulse until finely chopped. Add the lime juice and pulse to combine. Serve with chips, if desired.
