APPLE PIE WAFFLES

Apple Pie Waffles

1 3/4 cups Whole wheat pastry flour
4 t Truvia
1 t Baking powder
1/2 t Baking soda
1 1/2 t Cinnamon
1/4 t Nutmeg
1/8 t Ground cloves
1/4 t Ground ginger
1/4 t Salt
1/2 t Vanilla
1/2 cup Applesauce
1 3/4 cup Skim milk
4 large Egg whites
Cooking spray


1 Preheat oven to 250 (to keep waffles warm after cooking). Preheat your waffle maker.

2 Combine all dry ingredients through salt in a large mixing bowl (flour, Truvia, baking powder, baking soda, cinnamon, nutmeg, ground clove, ginger, and salt). Whisk to combine.

3 In a separate bowl, combine the vanilla, applesauce, and milk. Mix well.

4 Slowly whisk the wet ingredients into the dry ingredients - just until combined. Don't overmix.

5 In a separate bowl, whisk the egg yolks until they reach stiff peaks.

6 Gently fold the egg whites into the waffle mix until well combined.

7 Spray your waffle maker with cooking spray and pour in the waffle batter. Close and cook for 5-7 minutes, depending on your waffle maker.

8 Serve hot with a sprinkle of cinnamon and roasted apple slices or warmed-up applesauce.
