FUDGY OLIVE OIL BROWNIES

Olive Oil Brownies

1/4 C Extra-virgin olive oil
1/4 C Non-fat Greek yogurt
1/4 C Dark brown sugar
1/2 C Sugar (or 3.5 Tbl/12 packets Truvia)
2 tsp Vanilla extract
2/3 C Applesauce, unsweetened
1/2 C Whole wheat flour
1/3 C Cocoa power (plus optional 1-2 Tbl more)
1 tsp Instant espresso powder
1/4 tsp Baking powder
1/4 tsp Salt
1/3 C Walnuts, chopped (optional)
Flaky sea salt for sprinkling (optional)


1 Preheat the oven at 350 degrees Fahrenheit.

2 In a bowl mix the olive oil, vanilla, and sugars with a spoon until smooth.

3 Mix the applesauce and yogurt in a small bowl and add to the olive oil mixture, mixing well.

4 In another bowl blend the flour, cocoa powder, instant espresso powder, salt and baking powder. Add to olive oil mixture and mix well.

5 If using nuts, pour into batter and mix again.

6 Line a 9 inch square pan with wax paper and pour the brownie mixture in the pan, smooth the top with a spatula.

7 Bake for about 25 minutes or until a toothpick inserted 1 inch away from the edge comes out clean.

8 Let it cool completely, remove the wax paper and cut in squares.

9 Enjoy!
