Preheat the oven at 350 degrees Fahrenheit. |

In a bowl mix the olive oil, vanilla, and sugars with a spoon until smooth. |

Mix the applesauce and yogurt in a small bowl and add to the olive oil mixture, mixing well. |

In another bowl blend the flour, cocoa powder, instant espresso powder, salt and baking powder. Add to olive oil mixture and mix well. |

If using nuts, pour into batter and mix again. |

Line a 9 inch square pan with wax paper and pour the brownie mixture in the pan, smooth the top with a spatula. |

Bake for about 25 minutes or until a toothpick inserted 1 inch away from the edge comes out clean. |

Let it cool completely, remove the wax paper and cut in squares. |
