BLACK BEAN BROWNIES

1 Cup Black beans, rinsed and drained
2 Tbs Olive oil
1/2 Cup Frozen spinach, dry and thawed
1/4 Cup Applesauce
2 Eggs
1 Egg yolk
3/4 Cup Sugar
3 Tbs Unsweetened cocoa

1½ Tbs Instant coffee*
3 Oz Bittersweet chocolate
2 Tbs Unsalted butter
2 tsp Vanilla
1/2 tsp Salt
1/2 Cup Flour
1/4 Cup Chocolate chips

Preheat oven to 350 degrees.

Combine the black beans, oil, spinach, applesauce, eggs, egg yolk, sugar, cocoa and coffee powder in a food processor. Pulse until smooth. (About 1 minute.)

Microwave the chocolate and butter until melted, stirring every 30 seconds. Allow to cool for five minutes. Add chocolate mix, vanilla and salt to the food processor, blend. Transfer mixture to bowl and stir in flour and chocolate chips.

Pour batter into a greased 9X13 baking pan. Bake 25 - 30 minutes. Cool for 15 minutes and serve!

Cooking Tips:
*Instant Espresso powder preferred.
