FIRECRACKER CHICKEN

Rub:
3 Tbs Paprika
1 Tbs Freshly ground black pepper
1 Tbs Kosher salt
¾ tsp Brown sugar
¾ tsp Chili powder
¾ tsp Garlic powder
½ tsp Ground cayenne pepper

Chicken:
3½ Pounds Chicken thighs or legs
Cooking spray to coat

Combine the paprika, pepper, salt, brown sugar, chili powder, garlic powder and cayenne pepper into a rub. Coat the chicken pieces with the rub mixture and seal in a freezer bag. Place bag in refrigerator.*

Prepare Grill to medium heat.

Remove chicken from refrigerator and coat each piece evenly with cooking spray. Grill for 30 minutes, turning occassionally, until cooked through and juices run clear. Enjoy!

Servings: 6

Cooking Tips:
*Prepare rub at least one hour and up to 8 before grilling.
