CRANBERRY CRUSTED SALMON

Cranberry Crusted Salmon

4 6oz Salmon fillets
2 Tbs Dijon mustard
¾ Cup Fresh breadcrumbs
¼ Cup Dried cranberries, chopped
½ Cup Chopped green onion

2 Tbs Butter, melted
2 Tbs Chopped, fresh thyme
2 tsp Grated lemon peel
Salt and pepper to taste

Preheat oven to 375 degrees.

Season salmon with salt and pepper. Rub a layer of mustard over each fillet. Put onto a greased baking sheet, skin side down.
In a medium bowl, combine breadcrumbs, cranberries, green onion, melted butter, thyme and lemon peel. Mix well. Season to taste. Divide crust mixture evenly over salmon fillets.

Bake about 20 minutes or until salmon flakes well with fork. Enjoy!
