PORK CHOP SANDWICHES

Sandwich:
2 tsp Olive oil
4 Butterfly pork chops, thinly cut and trimmed
4 English muffins
1 Cup Alfalfa sprouts
4 Slices Tomato
Romaine lettuce leaves
Sauce:
4 Tbs Sour cream, reduced fat
1 Tbs Tomato paste
1 Tbs Fresh lime juice
½ tsp Ground cumin
Salt and pepper to taste
Coat large skillet with olive oil. Over medium heat, cook pork chops for 3-5 minutes per side or until browned and cooked through.
Combine all sauce ingredients and stir well.
Toast english muffins or sandwich buns. Serve pork chops on muffin or bun with alfalfa sprouts, tomato, and romaine lettuce leaves with a dollop of sauce.
