TUNA SALAD PITAS
1 Can Tuna in water, drained
½ Cup Chopped and drained bread and butter pickle chips
3 Tbs Plain, nonfat yogurt
3 Tbs Light mayonnaise
1 Tbs Dijon mustard
1 Red bell pepper, chopped
½ Cup Chopped red onion
½ Cup Chopped, peeled and cored Granny Smith apple
1 tsp Apple cider vinegar
4 Pita breads, halved and opened
Lettuce to garnish
Salt and pepper to taste
Mix the tuna, pickle chips, yogurt, mayo and mustard in a small bowl. Season with salt and pepper. In a medium bowl, combine the bell pepper, onion, apple and vinegar. Fold the vegetable mixture into the tuna mixture incrementally while stirring to blend. Season full mixture with salt and pepper. Spoon the mixture evenly into the halved pitas and garnish with lettuce. Enjoy!
