 Blueberry Bran-Cakes
 
 
1 Cup    Bran flakes  
1   Egg  
1¼ Cups    Milk  
2 Tbs    Vegetable oil  
1 Cup    All-purpose flour  
 
1 Tbs    Sugar  
1 tsp    Baking powder  
½ tsp    Baking soda  
½ tsp    Salt  
½ Cup    Blueberries (fresh or frozen*)  
 
Crush up cereal. In a bowl beat the egg and then stir in the milk oil and cereal. Let mixture stand until the cereal has softened. (About 5 minutes.) Stir in the remaining dry ingredients and whisk until blended.** Then stir in the blueberries.
Heat non-stick griddle or skillet.*** Pour ¼ cup of the batter, per pancake, onto the griddle. Flip when bubbles appear and cook until golden brown on both sides. Enjoy!
