ROASTED DUCK TACOS

8 Soft tortillas
1/2 Roast Duck Meat, diced*
1 Large Lime, cut into 8 wedges
1 Cup Sour cream

1 Cup Salsa
2 Red bell peppers, roasted and peeled
3 Cups Fine lettuce
4 Green onions, thinly sliced

Warm the tortillas.

Divide the duck meat, lime wedges, sour cream and salsa into serving bowls. Cut the roasted peppers into thin slices. In a large bowl, combine with the lettuce and onions. Toss well.

Spread sour cream onto tortilla and top with salsa, duck and lettuce mixture. Squeeze lime over taco to taste. Roll and enjoy!


Servings: 4

Cooking Tips
*Great for leftover duck meat. If you don't have leftovers, try your local deli counter.
