POTATO PIZZA

Pizza dough
Vegetable oil cooking spray
1 Tbs Cornmeal
1 Pound Red potatoes, scrubbed, unpeeled
½ Pound Yellow onions, pared, sliced paper thin

1 Clove Garlic, finely minced
½ tsp Fresh sage leaves, minced
½ tsp Ground black pepper
½ tsp Salt

Preheat oven to 400 degrees.

Roll out pizza dough on floured work surface to fit a 12 inch, round pizza pan. Spray the pan lightly with cooking spray. Fit the pizza dough on the pan and dust with cornmeal.

Dry potatoes thoroughly. Slice as thinly as possible into rounds. Place potatoes, thinly sliced onions, minced garlic and sage in a bowl. Toss with rubber spatula to mix well. Spray the pizza crust lightly with cooking spray and layer the potato-onion mixture evenly across. Sprinkle with salt and black pepper.

Bake for 35-40 minutes, until potatoes are cooked through and golden brown.* Remove from oven and let rest for a minute or two. Slice and serve!

Cooking Tips
*During the last 15 minutes of cooking, if the potatoes brown too fast, spray a 12 inch circle of aluminum foil with vegetable oil cooking spray, and lay lightly on top of the pizza, sprayed-side down.
