 Marcia's Mushroom and Onion Tilapia
 
 
2 Tbs    Olive oil  
1 Large    Sweet onion, sliced  
2 Packages    Mushrooms*  
 
1/3 Cup    Dry vermouth (or dry white wine)  
3 Cloves    Garlic, pressed (optional)  
4   Tilapia steaks  
 
Heat olive oil in large skillet. Add onions and mushrooms over medium high heat. Saute until onions are translucent and mushrooms are bronzed. Add vermouth and cook approximately 1 to 2 minutes until bubbly. Add the garlic now if you are using it. Place Tilapia steak on top of onion and mushroom mixture. Cover and reduce heat. Cook approximately 7-10 minutes or until fish is done. Serve with onion and mushroom mixture surrounding the fish.
