BANANA CHOCOLATE TARTS

4 Small (3") Graham cracker tart crusts
3 Tbs Heavy cream
1 tsp Vanilla extract
½ tsp Granulated sugar

1 Medium Banana, halved lengthwise
3 Tbs Chocolate chips, melted
2 tsp Packed brown sugar

Beat the cream, vanilla and sugar in a mixing bowl until stiff. Mash one half of the banana. Mix banana into cream mixture. Then, fold in chocolate. Divide the filling evenly among the tart crusts. Refrigerate for one hour.

Sprinkle a small, nonstick cooking pan with brown sugar. Slice the remaining banana in half and put it into the pan. Heat on low until the banana starts to sizzle. Toss pan to coat banana with sugar. Cook until the banana slices are browned and caramelized on both sides. Top each tart with pieces of banana. Enjoy!
