VIVIAN'S QUINOA SALAD
2 Cups Cooked quinoa
1 Large Tomato, seeded and diced
1 Large Cucumber, seeded and diced
1 Can Chickpeas, drained
¼ Cup Minced fresh parsley
3 Tbs Minced fresh mint
1 Oz Crumbled feta cheese
2 Tbs Olive oil
Juice from 1/2 lemon
1 tsp White wine vinegar
Salt to taste
Mix all ingredients in a large bowl. Cover and chill for at least 30 minutes. Enjoy.
