WATERCRESS SALAD WITH AVOCADO

Dressing:
4 Large Garlic cloves
2 Thick Slices of red onion
1/3 Cup Pomegranate juice
1/4 Cup Fresh lime juice
1 Tbs Molasses
1 Tbs Minced, seeded, serrano chilies
3/4 tsp Aniseed
3 Tbs Olive oil
2 ½ Tbs Chopped fresh cilantro

Salad:
4 Large Oranges
5 Cups Thinly sliced red cabbage
3 Bunches Watercress, stems trimmed
5 Green onions, cut into thin strips
2 Large Avocados, peeled, pitted, cut lengthwise into ½-inch thick slices

For Dressing:
Finely chop garlic and onion. In a small bowl, whisk pomegranate juice, lime juice, molasses, Serrano chilies and aniseed. Then, whisk in olive oil. Add the chopped garlic and onion. Season with salt and pepper. Whisk in cilantro.

For Salad:
Peel and pith oranges. Cut along segments. Combine cabbage, watercress, green onions and oranges in large bowl. Add dressing and avocado slices and toss gently to coat. Transfer salad to large platter and serve.
