SAUSAGE STUFFED PEPPERS WITH ZUCCHINI

1/2 Pound Sweet Italian turkey (or chicken) sausages, casings removed
1/4 Cup Fresh mushrooms, chopped
3/4 Cup Coarsely grated zucchini
1/4 Cup Finely chopped red onion
2 Tbs Fresh parsley, minced
2 Tbs Fine dry breadcrumbs

1 Egg
1/2 tsp Ground black pepper
1 Pinch Salt
1/4 tsp Minced fresh rosemary
2 Medium Bell peppers (Red preferred), cut in half, seeded
Parmesan cheese to dust

Preheat oven to 350 degrees

In a large bowl, combine the sausage, mushrooms, zucchini, red onion, parsley, breadcrumbs, egg, salt and pepper, and rosemary. Mix well. Fill the pepper halves with the mixture equally. Poke holes into bottom of the peppers and arrange them on a broiler pan.*

Bake peppers, uncovered, for one hour or until the tops are browned. Dust with parmesan cheese and serve!

Servings: 4

Cooking Tips
* This will allow the grease to drain out of the peppers.
