ROBIN'S SOUTHWEST CHICKEN WRAPS

¼ tsp Cayenne pepper
½ tsp Paprika (or chipotle pepper powder)
1 tsp Garlic powder
½ tsp Ground pepper
½ tsp Ground chili powder
½ tsp Ground cumin
1½ tsp Fresh lemon juice

1 Tbs Olive oil
2 Chicken breasts, boneless, skinless, cut into chunks
2 Red bell peppers, sliced into strips
1 Onion, sliced into strips
2 Ears of corn, kernels sliced from ears
4 Small Flour tortillas
Guacamole to top

In a medium bowl, combine all the spices, lemon juice, and olive oil to make a spice paste. Add the chopped chicken to the bowl and toss to coat evenly. Let chicken sit while you chop vegetables.

Heat a large skillet over medium heat. Add the seasoned chicken, onions, peppers, and corn. Sauté the chicken on all sides*. Once the chicken is cooked through, serve in tortillas with a tablespoon of Guacamole.

Servings: 4

Cooking Tips
*If the chicken begins to stick to the skillet, use additional olive oil
