TURKEY TORTILLA SOUP
1 tsp Olive oil
1 Cup Onion, chopped
1 4 oz can Green chilies, chopped
1 1.25 pkg Taco seasoning mix
1 16 oz can Diced tomatoes
6 Cups Low-sodium turkey broth
10 oz Frozen corn
2 Cups Cooked turkey, cut into cubes
1/3 Cup Fresh cilantro, chopped
Unsalted tortilla chips, crumbled to top
Grated Monterey Jack cheese to top
In a large saucepan, heat the olive oil over medium heat. Sauté onion for 2-5 minutes until translucent. Stir in the green chilies and taco seasoning. Cook for 1 minute and then add tomatoes.
Stir in turkey broth and bring to a boil. Add corn and turkey and then reduce heat. Simmer for 10 minutes. Add cilantro. Serve in bowls topped with crumbled tortilla chips and grated Monterey cheese. Enjoy!
