CHOCOLATE MUFFINS WITH RAISINS
1/2 Cup Water
1/2 Cup Raisins
1/4 Cup Unsweetened cocoa powder
1 Oz Bittersweet chocolate, coarsley chopped
3 Tbs Light brown sugar, packed
1 Large Egg
1/4 tsp Vanilla
1/4 tsp Baking soda
1 Pinch Salt
2 Tbs All-purpose flour
Vegetable cooking spray
Confectioner's sugar to dust
Preheat Oven to 325 degrees
In a heavy saucepan, bring water and raisins to a boil. Transfer to a food processor (or blender), and add cocoa powder and chocolate. Pulse once to combine. Let it cool for a few minutes. Then add brown sugar, egg, vanilla, baking soda, pinch of salt and purée until smooth. Add flour and pulse just to combine.
Spray muffin pan with cooking spray. Pour batter evenly into muffin cups. Bake for 15 minutes or until toothpick comes out clean. Cool on rack for 10 minutes. Dust with confectioner's sugar and serve!
