 Banana Stuffed French Toast Sandwiches
 
 
2 Large    Bananas, ripe and cut into quarters  
2 tsp    Sugar  
1/2 Cup    Nonfat milk  
2 Large    Eggs  
1 tsp    Vanilla extract  
 
½ Tbs    Ground cinnamon  
  Nonstick cooking spray  
  Powdered sugar for dusting  
8 Large    Strawberries, chopped, to garnish  
 
Preheat oven to 350 degrees
Place banana quarters into a bowl and sprinkle with sugar. Mash up the bananas. Spread the mixture evenly over four pieces of bread and top with another piece of bread.
In a deep dish, whisk the milk, eggs, extract and cinnamon together. Dip each sandwich into the egg mixture. Let it soak for 30 seconds and then flip.
Spray a griddle (or large skillet if working in batches) with cooking spray. Heat over medium heat. Add the sandwiches and cook until golden brown on both sides. (About 2 minutes per side) Transfer sandwiches to a baking sheet and bake for 8 - 10 minutes. Dust with powdered sugar and garnish with chopped strawberries.
