| Preheat oven to 350 degrees |
| Place banana quarters into a bowl and sprinkle with sugar. Mash up the bananas. Spread the mixture evenly over four pieces of bread and top with another piece of bread. |
| In a deep dish, whisk the milk, eggs, extract and cinnamon together. Dip each sandwich into the egg mixture. Let it soak for 30 seconds and then flip. |
| Spray a griddle (or large skillet if working in batches) with cooking spray. Heat over medium heat. Add the sandwiches and cook until golden brown on both sides. (About 2 minutes per side) Transfer sandwiches to a baking sheet and bake for 8 - 10 minutes. Dust with powdered sugar and garnish with chopped strawberries. |
