SWEET AND SOUR APPLE CHOPS

Nonstick cooking spray
4 5 oz Boneless pork chops, ¾ inch thick
Salt and pepper to taste
1 tsp Dried oregano
1 Tbs Olive oil

2 Large Apples, unpeeled, cored and cut into ½ inch wedges
1 Large Onion, cut into ½ inch wedges
1/3 Cup Unsweetened apple juice
1/4 Cup Apple cider vinegar

Spray a large nonstick skillet with the cooking spray. Heat over medium heat. Season the pork chops with salt and pepper and then sauté for about 5 minutes. Sprinkle the chops with about ½ tsp of oregano. Flip the chops, season if desired, and sauté an additional 3 minutes. Then, transfer the chops to a plate and cover tightly with foil.

In the same skillet, heat the olive oil. Add the apple and onion wedges and season with the remaining oregano. Sauté for about 8-10 minutes or until onions are tender. Return the pork and juices back to the skillet. Add the apple juice and vinegar. Cook until the liquid reduces or until the pork is heated through. (Just a few minutes) Season with salt and pepper. Serve!

Servings: 4

Cooking Tips:
You can serve the apple/onion mixture on top of the chop or as a side.
