MARIA'S VEGETARIAN CHILI

2 Tbs Olive oil
1 Green bell pepper, diced
1 Red bell pepper, diced
1 Medium Onion, diced
4 Cloves Garlic, chopped
10 Ounces Morningstar crumbles*
1 12 oz Can Diced tomatoes

2 12 oz Cans Chili hot beans
1 12 oz Can Black beans, drained
Chili powder to taste
Garlic salt to taste
Salt to taste
Ground red pepper to taste
Shredded cheddar cheese to garnish (optional)

Heat olive oil in a large stock pot. Sauté bell peppers, onion, and garlic until onions are transparent. Add the crumbles and season with chili powder, garlic salt, and salt. Cook until the crumbles are hot. (About 7-10 minutes) Add the diced tomatoes and season again. Simmer for another 5-7 minutes. Add the beans, season to taste again, and then simmer for at least 20 minutes. Serve in a bowl and garnish with cheese.

Cooking Tips
*This is a ground soy protein product. Boca has a burger-less ground burger product which is similar that can be substituted here.
