APPLE CURRY CHICKEN
1 1/4 Pounds Chicken breasts, skinless and boneless 3 Tbs Flour
1 Tbs Olive oil
1 Onion, peeled and chopped
1 Tbs Water
1 Apple, peeled, cored and chopped
1 cup Fat-free chicken broth
1/2 tsp Salt
1/4 tsp Curry powder
1/8 tsp Ground ginger
1/8 tsp Ground turmeric
1/8 tsp Ground black pepper
1/3 cup Raisins
Preheat oven to 350°F.
Rinse chicken breasts, pat dry and roll in flour.
Heat oil in a large skillet over medium-high heat. Add chicken and brown on both sides, about 4 minutes total. Set aside in a baking dish.
In the same skillet over medium heat, cook onion in water for 5 minutes; add apple and cook 1 minute longer. Spoon over reserved chicken.
In a small bowl combine chicken broth, salt, curry, ginger, turmeric and pepper. Pour over chicken and bake, covered, 40 minutes. Add raisins and cook 5 more minutes, until chicken is done. Serve hot.
